Healthy Pumpkin Recipes
Fall has arrived which means bring on pumpkin everything. I am sharing two of my favorite pumpkin recipes =) Both are VERY easy and quick…Less than four ingredients for each one! If you aren’t a pumpkin fan I would quickly exit stage left.
Greyson is at an age where anything he’s not technically suppose to be playing with, such as bowls, food or utensils, are the most exciting things around. Therefore, I try to let him “help” as much as possible. This usually just entails him throwing the bananas at me and laughing but whatever keeps him happy!
The first recipe is a pumpkin pancake 🥞! However, no flour. Just three simple ingredients mixed together with a couple spices for flavoring. So easy! I’ve listed the ingredients with step by step cooking instructions below. They are delicious and make the whole house smell yummy first thing in the morning.
The second recipe I’m sharing is a version of “healthy” oat cookies! Once again there are three ingredients you mix together, toss in your optional add ons and ta da…! Pumpkin cookies. There are lots of fun things you can put in these so get creative and enjoy!
