Slow Cooker Chicken Pot Pie
Even though we have our chef, who I’m hoping never leaves and grows old with Michael and I, I still love to cook. Since she was out of town for the past few weeks I’ve been trying to find yummy new options. Even though I’m on bedrest I can still put some stuff into the crockpot. I just can’t lift the crockpot 😝. Cooking with limitations is how I like to refer to it.
In no way shape or form am I trying to sell this as a healthy dinner but it sure is delicious! Since I’m not able to do much currently I am all about the comfort foods. I took a break from my daily Taco Bell and busted out the crockpot. Every Sunday we have ‘family dinner’ which includes, most times, roughly 8 people. That being said I am always looking for yummy dinners that are able to feed everyone. My sister in law and husband REALLY try to avoid carbs which makes my mission even trickier at times. I try to use my crockpot as much as possible because- well its easy. I can make a larger sized meal without using every single pan and dish in the house.
This one is something you can slightly play around with. You can add other veggies, such as potatoes or green beans, and take out certain ones you may not like- i.e. peas 🤢. Whatever your tastebuds require you can make it happen.
The first time I made this I used a full cup of chicken stock and found the mixture to be a little too soupy for my liking. I had to add some flour to thicken it up in a panic. Yes, I fully panicked lol- Cooking for 8 is one heck of a responsibility! My family would kick me out if I messed up dinner. Completely joking 😆 – they would just order Chinese.
